Ingredients
- 2 cups heavy whipping cream
- 2 cups white sugar
- 1 pound mascarpone cheese
- 2 cups brewed espresso, chilled
- 50 ladyfinger cookies, or more as needed
Method
- Using an electric mixer, whip the heavy cream in a bowl until it thickens. Incorporate the mascarpone cheese and sugar, then continue beating until the mixture is fully combined.
- Place the chilled espresso into a separate bowl. Briefly dip each ladyfinger cookie into the espresso, then lightly press it onto a paper towel to soak up any extra liquid. Create a single layer of the dipped cookies across the base of a 13x9-inch dish. Evenly spread 1/2 of the mascarpone mixture over this layer. Add a second layer of dipped ladyfingers on top, then cover them with the remaining 1/2 mascarpone mixture. Place the dish in the refrigerator to chill for 24 hours.
