5-Ingredient Teriyaki Chicken
This straightforward Japanese chicken dish requires only five key ingredients. Chicken pieces are baked in a homemade teriyaki sauce made from soy sauce, dark brown sugar, garlic, and fresh ginger. The long, slow cooking results in incredibly tender, flavourful meat. The recipe is easily scaled up for a crowd using an electric roaster, and the sauce can be doubled to serve over rice.
Ingredients
- 4 -6 chicken pieces (skinned thighs and legs are best!)
- 1 cup kikoman soy sauce
- 1 1/2-2 cups dark brown sugar (to taste)
- 4 garlic cloves
- 2 tablespoons freshly grated ginger
Method
- Set your oven to 350°F to preheat.
- Prepare the garlic by peeling and mincing it.
- Combine the soy sauce, brown sugar, minced garlic, and grated ginger in a bowl, stirring until the sugar dissolves. Place the chicken pieces in a 9x13 pan and pour the prepared sauce over them. Cover the pan tightly with foil and bake for a minimum of one hour, or until the chicken is fully cooked. For very tender meat, you can bake it for about 2 1/2 hours.
- For enhanced flavour, you may marinate the chicken in the sauce for at least 2 hours prior to cooking.
- When using an electric roaster, ensure the chicken is fully covered with sauce. Cook it covered at 325°F for approximately 4 hours.
