This straightforward dessert delivers impressive flavour with minimal effort. It requires only five ingredients and about 40 minutes total time. The recipe yields six individual shortcakes, featuring homemade biscuits baked until golden. They are filled with strawberries macerated in sugar and freshly whipped vanilla cream. It's a perfect, quick treat for a summer gathering or a simple family pudding.

Strawberry Shortcakes

Ingredients

  • 1 quart strawberries, quartered or sliced
  • 1/2 cup sugar, divided
  • 5 ounces (about 1 cup) self-rising flour
  • 1 pint heavy cream
  • 1/2 teaspoon vanilla extract

Method

  1. Position the oven rack in the centre and heat the oven to 450°F (230°C). Combine the strawberries with 6 tablespoons of sugar in a bowl and leave to one side.
  2. Add the self-rising flour to a large mixing bowl. Whisk in 1 tablespoon of the sugar. While stirring with a wooden spoon, slowly pour in 3/4 cup of the heavy cream. Mix just until a rough, lumpy dough comes together.
  3. Drop balls of dough onto a baking sheet lined with parchment paper using a 1-ounce scoop, leaving 2 inches between them. Lightly brush the tops with cream and bake for about 12 minutes until they turn a golden brown colour. Transfer the baked biscuits to a wire rack.
  4. Whip the rest of the cream with the final tablespoon of sugar and the vanilla extract using a whisk or electric mixer until it forms firm peaks. Slice the biscuits in half, spoon on the strawberries and a dollop of cream, then replace the tops. Add more whipped cream if desired and serve straight away.
