Spicy Pork with Five Ingredients
This Korean-inspired spicy pork dish delivers a gourmet experience with minimal effort. It requires just five core ingredients for the flavourful marinade. The thinly sliced pork tenderloin is quickly seared after marinating, resulting in a caramelised, spicy finish. Serve it simply with steamed rice and your choice of vegetables for a complete and satisfying dinner. The recipe is versatile enough for bowls, stir fries, or wraps.
Ingredients
- 2 tablespoons hot chili paste (I like sambal oelek, but sriracha can also work)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1-inch piece of ginger, peeled and finely grated
- 1 garlic clove, finely grated
- 1 1/2 pounds pork tenderloin, very thinly sliced (see notes)
- 2 tablespoons vegetable oil
- 1 1/2 cups rice, uncooked
- 2 carrots, sliced into coins
- 3 cups spinach, cooked down
- 2 tablespoons green onions, sliced
Method
- Combine all the sauce ingredients in a jar and shake well. Pour this mixture over the sliced pork and let it marinate for 20 minutes to 1 hour.
- Place a cast iron or other heavy skillet on the hob and add a small amount of vegetable oil.
- Once the oil is hot, arrange the pork in the pan in one layer, cooking in batches if needed. Leave it to cook without moving for 1-2 minutes until caramelised. Turn the pieces over and cook the other side.
- Serve the finished pork immediately with cooked rice and prepared vegetables.
