This Italian main course delivers big flavour with minimal effort. Using just a handful of key ingredients, you can create a complete meal in only 10 minutes. Tender chicken pieces are cooked with vibrant broccoli rabe, salty olives and rich sun-dried tomatoes, then finished with crumbled feta cheese. It's a perfect speedy weeknight dinner for four, often accompanied by pasta or rice.

Sautéed Chicken and Broccoli Rabe

Ingredients

  • 110g diced oil-packed sun-dried tomatoes, plus 1 tbsp oil from jar
  • 500g boneless skinless chicken breast halves, cut into 4-cm pieces
  • 1 bunch broccoli rabe, chopped
  • 40g sliced pitted black olives
  • 60ml water
  • Salt
  • Freshly ground black pepper
  • 30g crumbled feta cheese

Method

  1. Warm the tablespoon of oil from the sun-dried tomatoes in a large skillet. Place the chicken pieces in the pan and cook for 3 to 5 minutes until they are browned on all sides.
  2. Introduce the sun-dried tomatoes, chopped broccoli rabe, sliced olives and 60ml water to the skillet. Season with salt and pepper, place a lid on the pan and cook for 3 minutes until the greens have wilted and the chicken is fully cooked.
  3. Take the skillet off the heat. Move the contents to a serving dish and scatter the crumbled feta cheese over the top. This dish is commonly paired with capellini pasta or rice.
