Ingredients

  • 4 (6 ounce) salmon fillets
  • salt
  • pepper
  • 1 cup heavy cream (half and half or milk do not work well for this recipe)
  • 1 tablespoon honey
  • 4 tablespoons Dijon mustard (I love to use a mix of stone ground and dijon if you have both, but it is not necessary)
  • 1 teaspoon fresh dill, fine minced

Method

  1. Take the salmon fillets from the fridge to lose their chill. You may keep the skin on or have it removed. Prepare a foil-lined baking sheet with non-stick spray or olive oil, then place the fish on it and season generously with salt and pepper.
  2. While the salmon rests, begin the sauce. Combine the heavy cream, honey and mustard in a small saucepan. Whisk the mixture together over medium high heat until it reaches a light boil. Reduce the heat to medium low and let it simmer for approximately 7-10 minutes, stirring as it boils and a few times after reducing the heat, until it reduces and thickens.
  3. Cook the salmon using your preferred method, such as broiling, baking or grilling. If broiling, position the baking sheet on the second shelf. The cooking time will be anywhere from 8-15 minutes, depending on the fillet thickness.
  4. Just before serving, mix the minced fresh dill into the mustard sauce. Drizzle the finished sauce over the cooked salmon fillets.
