Transform leftover roast beef into a comforting one-dish meal. This recipe combines diced potatoes, carrots, and beef with a savoury seasoning mix, all baked together. The dish is first cooked covered until the potatoes become tender, then finished uncovered to achieve a deliciously crispy top. It's a straightforward and satisfying dinner option that can even be prepared ahead of time.
Ingredients
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 2 -3 lbs leftover roast beef or 2 -3 lbs store bought pre- cooked beef roast, small dice
- 4 -5 carrots, half coin cut, sauteed until tender
- 1 (1 ounce) package mccormick beef stew seasoning
- 1 1/2 cups beef broth
Method
- Set your oven to heat to 350 degrees.
- In a medium bowl, mix all the listed ingredients together, but leave out the beef broth, ensuring they are well combined.
- Transfer the mixture into a 9x13 pan, pressing it down, then pour the beef broth over the top.
- Cover the pan using plastic wrap and foil, then place it in the oven to bake for about 40 minutes, or until the potatoes are tender.
- Raise the oven temperature to 450 degrees, take off the foil and plastic wrap, and continue baking for a further 10 to 15 minutes until the surface is crispy.
