Ingredients

  • 1 tablespoon (14g) unsalted butter
  • 2 slices Taylor ham (3 ounces; 85g)
  • 2 large eggs
  • 2 slices American cheese
  • Kosher salt
  • Freshly ground black pepper
  • 1 Kaiser roll, split and warmed through (see notes)
  • Ketchup, optional (but also mandatory)

Method

  1. Prepare a plate with paper towel. Melt 1 tablespoon (14g) of unsalted butter in a 10-inch cast iron skillet until it foams. Cook the pork roll slices, pressing down occasionally, until the edges brown and the top domes, about 3 minutes. Flip and cook the other side for 2 to 3 minutes until browned, then transfer to the plate.
  2. Carefully crack the eggs into the skillet, season with salt, and cook until the whites set. Flip the eggs, season with pepper, and cook for about 2 minutes until over-easy. Place both cheese slices on one egg and cook for about 1 minute more until over-medium. Stack the cheese-topped egg on the plain egg and move to a plate.
  3. Take the split Kaiser roll and press the cut sides into the pan juices to coat them lightly.
  4. Place the stacked eggs on the bottom roll half, add the pork roll slices, and close the sandwich. Wrap it tightly in foil and let it steam for at least 3 minutes and up to five.
  5. Offer ketchup with the sandwich, either for dipping or spreading inside, according to taste.
