5-Ingredient Peanut Butter Chocolate Cookies
These straightforward cookies require only five pantry staples to create a rich, chocolatey treat. Combining creamy peanut butter with cocoa powder and a sugar alternative, they come together quickly. The dough is shaped, flattened, and baked until perfectly set. After a brief cooling period, they are chilled to firm up, resulting in a satisfying homemade biscuit ideal for an easy dessert.
Ingredients
- 1 cup creamy peanut butter
- 0.25 cup stevia sweetener (such as Truvia®)
- 1 large egg
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon vanilla extract
Method
- Preheat your oven to 350 degrees F (175 degrees C).
- Combine the peanut butter, stevia, egg, cocoa powder, and vanilla using an electric mixer or food processor until fully incorporated. Form the mixture into sixteen 1-inch balls. Arrange them 1 to 2 inches apart on a baking sheet that does not require greasing. Press down on each ball using the tines of a fork.
- Place the baking sheet in the oven and bake until the cookie edges are firm, about 10 minutes. Take them out and allow them to cool directly on the sheet for 10 minutes.
- Prepare a tray by lining it with waxed paper. Gently move the cookies onto this tray and leave them to reach room temperature, about 15 minutes. Finally, place them in the refrigerator to set completely, about 30 minutes.
