5 Ingredient Peanut Butter Chocolate Chip Cookies
These American-style cookies require only five basic ingredients for a delicious dessert. They bake up with a soft, chewy centre and golden edges. The recipe is naturally free from gluten and refined sugars, using coconut sugar and creamy peanut butter. You can have a batch of 24 cookies ready to enjoy in just 22 minutes.
Ingredients
- 2 cups lightly packed coconut sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 16-ounce jar creamy peanut butter (1 1/4 cups)
- 1 cup chocolate chips
Method
- Heat your oven to 350°F. Prepare a large rimmed baking sheet by lining it with parchment paper.
- Place the coconut sugar and eggs into a medium bowl and whisk them together until smooth. Blend in the vanilla extract and salt.
- Mix in the peanut butter, whisking until you have a smooth dough where the peanut butter is fully incorporated. You may need to finish with a large spoon. Stir in the chocolate chips until they are evenly distributed.
- To help the cookies keep their shape, chill the prepared dough for 15 minutes. Using a 1-tablespoon scoop or two spoons, drop heaping tablespoons of dough onto your baking sheet, spacing them 1 to 2 inches apart. Keep any unused dough chilled while the first batch bakes.
- Bake the cookies for 11 to 13 minutes, until the edges are golden but the centres look slightly underdone. Allow them to sit on the hot baking sheet for 2 minutes before moving them with a metal spatula to a rack to cool fully. Bake the remaining dough.
- Store the cooled cookies at room temperature for approximately 4 days. They can also be frozen for up to 3 months.
