  • 2 cups lightly packed coconut sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 16-ounce jar creamy peanut butter (1 1/4 cups)
  • 1 cup chocolate chips

Method

  1. Heat your oven to 350°F. Prepare a large rimmed baking sheet by lining it with parchment paper.
  2. Place the coconut sugar and eggs into a medium bowl and whisk them together until smooth. Blend in the vanilla extract and salt.
  3. Mix in the peanut butter, whisking until you have a smooth dough where the peanut butter is fully incorporated. You may need to finish with a large spoon. Stir in the chocolate chips until they are evenly distributed.
