5-Ingredient Mexican Casserole
This straightforward casserole is a quick dinner solution, assembling into a satisfying pie. It layers flour tortillas with a savoury mixture of refried beans and diced onion, plus salsa and shredded cheese. Baked until golden and bubbly, it's a comforting meal that comes together with minimal effort. Ideal for a busy weeknight, it serves four people.
Ingredients
- 1 (16 ounce) can refried beans
- 0.75 onion, diced
- 5 (10 inch) flour tortillas
- 1 cup salsa
- 2 cups shredded Cheddar or Colby Jack cheese
Method
- Collect your ingredients. Set your oven to 375 degrees F (190 degrees C). Use non-stick cooking spray to grease a 9-inch pie pan.
- Combine the refried beans and diced onion in a saucepan. Cook them for about 5 minutes to soften.
- Put one tortilla into the prepared pan. Cover it with roughly 1/3 cup of the bean mixture. Spoon a few tablespoons of salsa on top. Add another tortilla, then more beans. Sprinkle a generous handful of cheese evenly over the beans. Continue layering in this order, ensuring ingredients are spread evenly. Finish the top layer with plenty of salsa and cheese.
- Place in the oven and bake until the cheese has melted, approximately 15 to 20 minutes.
