5-Ingredient Mexican Casserole

Ingredients

  • 1 (16 ounce) can refried beans
  • 0.75 onion, diced
  • 5 (10 inch) flour tortillas
  • 1 cup salsa
  • 2 cups shredded Cheddar or Colby Jack cheese

Method

  1. Collect your ingredients. Set your oven to 375 degrees F (190 degrees C). Use non-stick cooking spray to grease a 9-inch pie pan.
  2. Combine the refried beans and diced onion in a saucepan. Cook them for about 5 minutes to soften.
  3. Put one tortilla into the prepared pan. Cover it with roughly 1/3 cup of the bean mixture. Spoon a few tablespoons of salsa on top. Add another tortilla, then more beans. Sprinkle a generous handful of cheese evenly over the beans. Continue layering in this order, ensuring ingredients are spread evenly. Finish the top layer with plenty of salsa and cheese.
  4. Place in the oven and bake until the cheese has melted, approximately 15 to 20 minutes.
