Ingredients

  • 1 lb large shrimp, peeled and deveined with tail intact
  • 1/4 cup olive oil, I use extra virgin
  • 1 teaspoon dried oregano
  • 1 large garlic clove, minced (or 2 small)
  • 1/2 lemon, juice of

Method

  1. In a shallow bowl, mix together all the listed ingredients apart from the shrimp. Crush the dried oregano between your fingers before adding to release its flavour.
  2. Place the shrimp into the bowl and toss them until they are fully coated in the marinade. Let them sit for 5 minutes.
  3. Thread the marinated shrimp onto skewers.
  4. Cook the skewers on the grill for 2-3 minutes on each side, until the shrimp turn opaque. Keep a close eye on them.
