Ingredients
- 1 lb large shrimp, peeled and deveined with tail intact
- 1/4 cup olive oil, I use extra virgin
- 1 teaspoon dried oregano
- 1 large garlic clove, minced (or 2 small)
- 1/2 lemon, juice of
Method
- In a shallow bowl, mix together all the listed ingredients apart from the shrimp. Crush the dried oregano between your fingers before adding to release its flavour.
- Place the shrimp into the bowl and toss them until they are fully coated in the marinade. Let them sit for 5 minutes.
- Thread the marinated shrimp onto skewers.
- Cook the skewers on the grill for 2-3 minutes on each side, until the shrimp turn opaque. Keep a close eye on them.
