Butter Lettuce Salad with Pesto Vinaigrette

Ingredients

  • 2 heads butter lettuce (can also go by Bibb or Boston, I like to get the organic or fresh packed vs the pre-bagged lettuce i)
  • pecorino romano cheese, grated (as a garnish)
  • 4 tablespoons olive oil
  • 4 tablespoons store bought pesto sauce
  • 2 tablespoons fresh lemon juice
  • fresh ground pepper

Method

  1. Prepare the vinaigrette by whisking together the olive oil, store bought pesto sauce, and fresh lemon juice with fresh ground pepper until well combined.
  2. For an optional extra chill, place the butter lettuce heads in a bowl of ice water for a couple of minutes. Afterwards, dry the leaves thoroughly and arrange them on plates.
  3. Drizzle the prepared pesto vinaigrette over the plated lettuce and finish with a garnish of grated pecorino romano cheese.
