Butter Lettuce Salad with Pesto Vinaigrette

Ingredients
- 2 heads butter lettuce (can also go by Bibb or Boston, I like to get the organic or fresh packed vs the pre-bagged lettuce i)
- pecorino romano cheese, grated (as a garnish)
- 4 tablespoons olive oil
- 4 tablespoons store bought pesto sauce
- 2 tablespoons fresh lemon juice
- fresh ground pepper
Method
- Prepare the vinaigrette by whisking together the olive oil, store bought pesto sauce, and fresh lemon juice with fresh ground pepper until well combined.
- For an optional extra chill, place the butter lettuce heads in a bowl of ice water for a couple of minutes. Afterwards, dry the leaves thoroughly and arrange them on plates.
- Drizzle the prepared pesto vinaigrette over the plated lettuce and finish with a garnish of grated pecorino romano cheese.
