Ingredients
- 3 heads broccoli
- 1 carrot
- 1/2 sweet red onion
- 3 cups low sodium chicken broth
- 1/4 cup evaporated milk
- olive oil

Method
- Cut the broccoli into 1 inch pieces and slice the carrot into rounds.
- Chop half of a sweet red onion, or the entire onion if it is small.
- Warm the olive oil in a pot large enough for all the vegetables and cook the onion for 1 minute.
- Place the remaining vegetables into the pot.
- Add salt and pepper, using white pepper if available, and cook for about 10 minutes until the onion is translucent.
- Pour in sufficient chicken broth to cover the broccoli.
- Allow the soup to reach a simmer and cook until the broccoli becomes soft and tender.
- Take the pot off the heat and let it cool for a minute or 2.
- Blend the soup in batches to prevent it from splattering.
- Pour the blended soup into a clean pot and mix in the evaporated milk.
- To achieve a thinner consistency, add more chicken stock and adjust the seasoning with salt and pepper.
