Ingredients

  • 3 heads broccoli
  • 1 carrot
  • 1/2 sweet red onion
  • 3 cups low sodium chicken broth
  • 1/4 cup evaporated milk
  • olive oil
  • salt and pepper

Method

  1. Cut the broccoli into 1 inch pieces and slice the carrot into rounds.
  2. Chop half of a sweet red onion, or the entire onion if it is small.
  3. Warm the olive oil in a pot large enough for all the vegetables and cook the onion for 1 minute.
  4. Place the remaining vegetables into the pot.
  5. Add salt and pepper, using white pepper if available, and cook for about 10 minutes until the onion is translucent.
  6. Pour in sufficient chicken broth to cover the broccoli.
  7. Allow the soup to reach a simmer and cook until the broccoli becomes soft and tender.
  8. Take the pot off the heat and let it cool for a minute or 2.
  9. Blend the soup in batches to prevent it from splattering.
  10. Pour the blended soup into a clean pot and mix in the evaporated milk.
  11. To achieve a thinner consistency, add more chicken stock and adjust the seasoning with salt and pepper.
