  • For the Bacon Burgers:

  • 750g minced beef
  • 6 strips streaky bacon, cooked until crisp in a skillet or microwave and crumbled

  • Freshly ground black pepper
  • 4 rounds sliced red onion (about 1-cm thick)
  • 4 slices sharp Cheddar (about 170 to 250g total)
  • 4 Kaiser rolls
  • For the Parmesan Black-Eyed Peas:
  • 2 tsps olive oil
  • 1 (400g) tin black-eyed peas, drained
  • Salt
  • Freshly ground black pepper
  • 1 tbsp grated parmesan
  • 1 tbsp freshly chopped parsley leaves

Method

  1. Prepare a stove-top grill pan or griddle by coating it with cooking spray and preheating it. Combine the minced beef, crumbled bacon, salt, and black pepper in a large bowl, mixing thoroughly. Form this mixture into four patties, each roughly 2-cm thick.
