This inventive Italian one dish meal features lasagna noodles rolled around a rich five cheese filling. The pinwheels are nestled in a casserole dish, covered with spaghetti sauce, and baked until bubbling. A final layer of melted cheddar and mozzarella crowns this comforting dish, which serves six and takes about 80 minutes to prepare and cook.

5-Cheese Pinwheel Lasagna

Ingredients

  • 12 lasagna noodles, cooked until almost done
  • 2 cups small curd cottage cheese
  • 3 ounces cream cheese
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (1 lb) jar of your favorite spaghetti sauce (1 pound at least)
  • 2 cups of shredded cheddar cheese
  • 2 1/2 cups shredded mozzarella cheese
  • 1/2 cup of grated parmesan cheese

Method

  1. Cook the lasagna noodles until nearly done, then drain them and place them in a pot of cold water until needed.
  2. Mix the cottage cheese, cream cheese, Parmesan and 1/2 cup of the mozzarella cheese together in a bowl.
  3. Stir the eggs, salt, and pepper into the cheese mixture.
  4. Take one noodle from the water, drain it and pat it dry with a paper towel.
  5. Spread roughly 1/4 cup of the cheese filling along the full length of the noodle.
  6. Beginning at one end, roll the noodle up tightly like a jelly roll.
  7. Position the roll seam-side down in a large casserole dish, such as a 9 x 13 inch one.
  8. Repeat the process with all the remaining noodles.
  9. The rolls can be placed touching each other in the dish if space is limited.
  10. Pour the jar of spaghetti sauce over all the assembled rolls.
  11. Gently slide a butter knife between the rolls and wiggle it to help the sauce seep down.
  12. Cover the dish tightly with aluminium foil.
  13. Bake in an oven preheated to 350 degrees for 40 minutes.
  14. Remove the foil covering.
  15. Sprinkle the remaining mozzarella and all of the cheddar cheese over the top of each roll.
  16. The quantity of cheese used can be adjusted to taste.
  17. Return to the oven and bake for a further 5 to 10 minutes until the cheese has melted.
