5 Bean Bake
This comforting dish combines five varieties of beans with crispy bacon and a rich sauce made from ketchup, brown sugar and cider vinegar. The beans are baked together until the flavours meld into a thick, savoury bake. It's an ideal make-ahead meal for gatherings, requiring minimal preparation for a satisfying result. The recipe yields enough for eight portions.
Ingredients
- 8 slices bacon, chopped
- 1 large onion, diced
- 1 (28 ounce) can pork and beans
- 1 (19 3/4 ounce) can black beans, rinsed and drained
- 1 (16 ounce) can chickpeas, rinsed and drained
- 1 (15 1/2 ounce) can kidney beans, rinsed and drained
- 1 (15 1/4 ounce) can lima beans, rinsed and drained
- 1 cup ketchup
- 1/2 cup brown sugar, firmly packed
- 1/2 cup water
- 1/4 cup cider vinegar
Method
- Place the chopped bacon in a large skillet and cook until crisp. Take the bacon out, leaving 2 tablespoons of the drippings in the pan. Add the diced onion to the hot drippings and cook for 5 minutes until softened.
- In a lightly greased 13 by 9 inch baking dish, mix together the cooked bacon, sautéed onion, pork and beans, black beans, chickpeas, kidney beans, lima beans, ketchup, brown sugar, 1/2 cup water and the cider vinegar.
- Cover the dish and bake at 350° for 1 hour. Then remove the cover and continue baking for another 30 minutes.
