This comforting dish combines five varieties of beans with crispy bacon and a rich sauce made from ketchup, brown sugar and cider vinegar. Ingredients

  • 8 slices bacon, chopped
  • 1 large onion, diced
  • 1 (28 ounce) can pork and beans
  • 1 (19 3/4 ounce) can black beans, rinsed and drained
  • 1 (16 ounce) can chickpeas, rinsed and drained
  • 1 (15 1/2 ounce) can kidney beans, rinsed and drained
  • 1 (15 1/4 ounce) can lima beans, rinsed and drained
  • 1 cup ketchup
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup water
  • 1/4 cup cider vinegar

Method

  1. Place the chopped bacon in a large skillet and cook until crisp. Take the bacon out, leaving 2 tablespoons of the drippings in the pan. Add the diced onion to the hot drippings and cook for 5 minutes until softened.
  2. In a lightly greased 13 by 9 inch baking dish, mix together the cooked bacon, sautéed onion, pork and beans, black beans, chickpeas, kidney beans, lima beans, ketchup, brown sugar, 1/2 cup water and the cider vinegar.
  3. Cover the dish and bake at 350° for 1 hour. Then remove the cover and continue baking for another 30 minutes.
