4th of July Cabbage Salad
This colourful salad features patriotic red, white, and blue elements, making it an ideal dish for a 4th of July celebration or summer picnic. It combines crisp shredded cabbage with crispy bacon, creamy coleslaw dressing, tangy blue cheese, and sweet cherry tomatoes. The salad is quick to assemble and is best served chilled. It yields 6 to 8 portions.
Ingredients
- 12 slices bacon
- 6 cups shredded cabbage (I used the bag kind)
- 1 cup coleslaw dressing
- 1/2 cup crumbled blue cheese
- 1 cup cherry tomatoes, cut into halves
Method
- Cook the bacon slices in a skillet until browned and crisp, then crumble them and set aside.
- Take a large bowl and add the crumbled bacon, shredded cabbage, and coleslaw dressing.
- Toss everything together until it is thoroughly combined.
- Scatter the halved cherry tomatoes and crumbled blue cheese over the top of the salad.
- Place the salad in the refrigerator to chill before serving.
