40 Cloves Boneless Chicken Breasts

Ingredients

  • 6 chicken breasts, boneless and skinless
  • 40 garlic cloves, peeled
  • salt & freshly ground black pepper, to taste
  • olive oil flavored cooking spray
  • 1/4 cup parsley, finely chopped

Method

  1. Set your oven to heat to 400 degrees.
  2. Coat a 13 x 9 baking dish with the olive oil cooking spray.
  3. Arrange the boneless chicken breasts in the prepared dish.
  4. Lightly spray the tops of the chicken breasts with more olive oil spray.
  5. Season the chicken generously with salt and freshly ground black pepper.
  6. Scatter the 40 peeled garlic cloves around the chicken in the pan.
  7. Use aluminium foil to cover the baking dish securely.
  8. Place the covered dish in the oven and bake for 30 minutes.
  9. Remove the foil and sprinkle the finely chopped parsley over the chicken.
  10. Return the dish to the oven, uncovered, and cook for a further 15 minutes.
