4 Star Chocolate Chunk Cookies
These highly rated cookies combine a classic dough with peanut butter, semisweet chocolate chunks and chopped pecans. The recipe makes two dozen substantial cookies, which bake to a golden brown with a soft centre. They are perfect for sharing as a dessert or a sweet treat. Preparation and baking takes around 30 minutes in total.
Ingredients
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter or 1 cup margarine, at room temperature
- 2/3 cup smooth peanut butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 (12 ounce) bag semisweet chocolate chunks (mini Hershey's kisses work well)
- 1 1/4 cups pecans, coarsely chopped
Method
- Preheat your oven to 325 degrees.
- Mix the flour, baking soda and salt together in a large bowl. In a separate large bowl, cream the butter, peanut butter, granulated sugar and brown sugar together until pale and fluffy, which should take about 3 minutes. Blend in the eggs and vanilla. Stir the flour mixture into the wet ingredients until a dough forms. Fold in the chocolate chunks and chopped pecans.
- Drop slightly rounded mounds of dough onto a large ungreased baking sheet using a 1/4 cup measure. Leave about 2 inches between each cookie.
- Bake the cookies at 325 degrees for 15 to 17 minutes. They are ready when the edges are golden brown and the tops are lightly coloured.
- Transfer the baking sheet to a wire rack and let the cookies cool for about 3 minutes. Then, use a metal spatula to move the cookies from the sheet to the wire rack to cool completely.
