These highly rated cookies combine a classic dough with peanut butter, semisweet chocolate chunks and chopped pecans. Ingredients

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter or 1 cup margarine, at room temperature
  • 2/3 cup smooth peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 (12 ounce) bag semisweet chocolate chunks (mini Hershey's kisses work well)
  • 1 1/4 cups pecans, coarsely chopped

Method

  1. Preheat your oven to 325 degrees.
  2. Mix the flour, baking soda and salt together in a large bowl. In a separate large bowl, cream the butter, peanut butter, granulated sugar and brown sugar together until pale and fluffy, which should take about 3 minutes. Blend in the eggs and vanilla. Stir the flour mixture into the wet ingredients until a dough forms. Fold in the chocolate chunks and chopped pecans.
  3. Drop slightly rounded mounds of dough onto a large ungreased baking sheet using a 1/4 cup measure. Leave about 2 inches between each cookie.
  4. Bake the cookies at 325 degrees for 15 to 17 minutes. They are ready when the edges are golden brown and the tops are lightly coloured.
  5. Transfer the baking sheet to a wire rack and let the cookies cool for about 3 minutes. Then, use a metal spatula to move the cookies from the sheet to the wire rack to cool completely.
