4 Ingredient Vegetarian Lasagna
This straightforward vegetarian lasagna is a cherished family recipe. It requires only four core ingredients: lasagna noodles, mozzarella, firm tofu and pasta sauce. The method involves creating a tofu and sauce filling, layering it with the pasta sheets and cheese, then baking until golden. It is a versatile base that can be adapted with extra vegetables or alternative cheeses to suit different dietary needs.
Ingredients
- 1 (16 ounce) package lasagna noodles
- 400 -500 g mozzarella cheese
- 1 (350 g) package extra firm tofu
- 2 (680 ml) cans pasta sauce
Method
- Cook 12 - 15 lasagna noodles following the directions on the packet.
- As the pasta cooks, drain the tofu and crumble it by hand into a very fine texture.
- Stir the pasta sauce into the crumbled tofu, reserving roughly half a cup of sauce for later.
- Grate the entire block of mozzarella cheese.
- Drain the cooked lasagna noodles and rinse them under cold water to cool them for handling.
- Spread the reserved half cup of sauce over the base of a rectangular baking dish. Place a layer of three noodles side by side to cover the bottom.
- Spoon a portion of the tofu and sauce mixture over the noodles, then sprinkle with a little grated cheese. Reserve the majority of the cheese for the final layer. Top with another layer of noodles.
- Continue layering the tofu mixture, a little cheese and noodles until the filling is used up. Finish with a final noodle layer and cover it thickly with the remaining grated cheese.
- Bake at 350 degrees for about 30 minutes or until the cheese topping is golden brown. Allow it to rest for 10 minutes before cutting and serving.
