4 Ingredient Tomato, Cucumber & Onion Salad
This vibrant salad offers a crisp alternative to leafy greens, combining colourful heirloom tomatoes, sweet onion and seedless cucumber. It is dressed simply with seasoned rice vinegar, requiring no additional oil. Finished with crushed garlic croutons for texture, it's a light and healthy side dish that pairs wonderfully with seafood or toasted bread. The recipe is quick to assemble, making it suitable for any occasion.
Ingredients
- 2 cups heirloom tomatoes, lightly seeded and rough chopped (I like to use a combination of heirlooms, purple, orange, red, yellow, whatever looks best)
- 1 large sweet onion, cut in quarters and thin sliced (I use a FL sweet, but you want a sweet onion)
- 2 English seedless cucumbers (cut lengthwise in half, and then again in half, and then seed and then thin slice)
- 1/3 cup seasoned rice vinegar, there are many other brands available (Nakano Seasoned Basil & Oregano)
- 1/2 cup crouton, crushed and broken up (Garlic cheese, or plain garlic)

Method
- Lightly seed and roughly chop the tomatoes, placing them in a medium bowl.
- Add the sliced cucumbers and onion to the bowl, tossing everything together gently.
- Pour in the seasoned rice vinegar, then season with salt and pepper, tossing again to combine.
- If using plain rice vinegar, mix 1/8 teaspoon each of dried oregano and basil into 1/2 cup of vinegar to replicate the flavour.
- Place the croutons in a small bag and crush them with a mallet or rolling pin to a rough texture.
- Sprinkle the crushed croutons over the salad and give it a final light toss before serving.
- For presentation, serve the salad on a lettuce leaf with a basil sprig, alongside a toasted baguette if desired.
