Strawberry Vinaigrette
This straightforward vinaigrette requires only four ingredients to create a pleasantly tangy dressing. It combines fresh strawberry purée with apple cider vinegar, honey and a sprinkle of poppy seeds. The flavours are allowed to develop for about 1 hour before chilling. It makes an excellent topping for fresh spinach leaves and serves four people.
Ingredients
- 4 large strawberries, pureed (1/3 cup pureed)
- 0.25 cup apple cider vinegar
- 1.5 tablespoons honey, or to taste
- 1 teaspoon poppy seeds
Method
- Place the strawberry purée, vinegar and honey into a small blender and process until completely smooth. Transfer this mixture to a glass jar and mix in the poppy seeds.
- Allow the dressing to rest at room temperature so the flavours can combine, for about 1 hour. Afterwards, place it in the refrigerator.
