Sausage and Potato Bake
This comforting bake is a family recipe passed down from father to child. It combines sliced smoked sausage, cubed potatoes and sweetcorn in a creamy chicken soup sauce, all baked together until tender. Ideal for a hearty supper or a satisfying brunch, it is traditionally served with buttered bread and fresh tomato slices. The entire meal comes together with just four core ingredients for minimal fuss.
Ingredients
- 1 (15 ounce) can whole kernel corn, drained (or whatever veggie you like)
- 1 lb smoked sausage, sliced (I use the lite kind)
- 1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
- 4 raw potatoes, cubed or 16 ounces frozen hash browns
Method
- Set your oven to heat to 350.
- Combine every ingredient in a casserole dish and mix them together. You may include an extra can of soup for more sauce or additional potatoes if preferred.
- Bake the mixture for approximately one hour.
- Add salt and pepper as desired before serving.
- For a slow cooker version, place all the components in the pot and cook for 4 hours on the high setting or for 6-8 hours on low.
