Ingredients

  • 2 cups whole wheat flour
  • 2 cups unbleached white flour
  • 1/2-1 teaspoon salt
  • 1 1/2 cups water

Method

  1. Combine the dry ingredients in a mixing bowl.
  2. Slowly pour in the water while stirring to form a dough, then knead the mixture in the bowl for 5 minutes.
  3. Allow the dough to sit undisturbed for 10 minutes.
  4. Transfer the dough to a greased baking sheet and roll it out to a 1/2 inch thickness. Mark it into sections with 3 inch intervals and prick the surface all over with a fork.
  5. Bake at 325 degrees for 50 minutes. Once baked, break the sheet into pieces along the scored lines and leave them to cool on a rack.
