Cocoa-Coffee Steak Marinade

Ingredients

  • 1 cup (235ml) hot, strong brewed coffee
  • 1/2 ounce (15g) unsweetened chocolate, finely chopped
  • 1 tablespoon (15g) dark brown sugar
  • 1 teaspoon (5g) kosher salt
  • Pinch chili powder or cayenne pepper
  • About 2 to 3 pounds (900g to 1.4kg) steak of your choice

Method

  1. Combine the coffee, chopped chocolate, brown sugar, salt, and chilli powder in a bowl, stirring until the chocolate has melted and the sugar and salt are completely dissolved. Allow the mixture to cool.
  2. Place the cooled marinade into a large resealable bag, add the steak, and press out any air before sealing. Refrigerate the bag for at least 1 hour and up to 12 hours. Before cooking, take the steak from the marinade, pat it dry with kitchen paper, and proceed to grill it to your liking.
