This straightforward chicken pot pie requires only four key components for a classic comfort food dinner. It features a double pastry crust filled with tender chicken, creamy condensed soup and convenient canned vegetables. The pie bakes to a golden finish, creating a satisfying meal that serves eight people from a single 9-inch dish. Preparation is minimal, making it an accessible choice for a hearty family supper.

4-Ingredient Chicken Pot Pie

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1 recipe pastry for a 9 inch double crust pie
  • 2 (15 ounce) cans mixed vegetables, drained
  • 1 (10.75 ounce) can condensed cream of chicken soup

Method

  1. Collect the required ingredients. Heat your oven to 375 degrees F (190 degrees C).
  2. Poach the chicken breast halves in water within a large saucepan until cooked through, for about 15 minutes, then chop into small pieces.
  3. While the chicken cooks, place one pie crust into a 9-inch pie dish, covering the base and sides.
  4. In a large mixing bowl, stir together the drained mixed vegetables, condensed cream of chicken soup and the diced chicken until combined, then transfer this filling into the crust.
  5. Place the second pie crust over the filling. Seal the edges by crimping them and make several openings in the top pastry.
  6. Place the pie in the heated oven and cook until the pastry turns a golden brown colour, for about 45 minutes.
  7. Serve the finished pie.
