4-Field Berry Frozen Yogurt

Ingredients

  • 1 1/4 liters europe's best mixed berries (Frozen)
  • 125 ml fine sugar
  • 30 ml water
  • 15 ml lime zest
  • 375 ml yogurt
  • 125 ml whipping cream

Method

  1. Purée the frozen berry mix and then pass it through a fine strainer.
  2. Mix in the sugar, water, and lime zest, then cover and leave for about 30 minutes so the sugar dissolves.
  3. Blend the yogurt into the berry mixture. Separately, whip the cream to form soft peaks and gently fold it in.
  4. Churn the mixture in your ice cream machine according to its directions. Enjoy it soft or transfer to a container and freeze until firm. A serving idea is to use lime cups.
  5. To make the cups, slice off the top third of each lime.
  6. Carefully cut a thin piece from the base so the lime stands up, then scoop out the flesh.
  7. Fill each prepared lime with the frozen yogurt and place in the freezer for approximately 1 hour.
  8. Serve the dessert while frozen.
