4 Cheese Spinach Dip
This rich dip combines cream cheese, parmesan, romano, and cheddar with spinach and aromatic seasonings. The mixture is blended until smooth, transferred to a dish, and baked until hot and bubbling. After a brief rest, it's ready to be scooped up with crispy pita wedges or tortilla chips for a comforting, cheesy starter.
Ingredients
- 8 ounces cream cheese
- 3/4 teaspoon garlic powder (not garlic salt)
- 1/4 cup freshly grated parmesan cheese
- 1 tablespoon not packed freshly grated romano cheese
- 1 tablespoon very finely chopped sweet red pepper
- 1 green onion, white and green finely chopped (scallion)
- 0.5 (16 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup grated medium cheddar
- 1 pinch cayenne pepper (optional)
Method
- Heat your oven to 400°F.
- Combine the first four ingredients using a hand or stand mixer, blending until soft and fully combined.
- Introduce the next two ingredients and mix just until they are blended in.
- Fold in the spinach, mixing on a low setting until it is evenly distributed.
- Spoon the mixture into a small ovenproof dish. Add a pinch of cayenne if desired, then cover with the grated cheddar. Bake for 15 - 18 minutes until the edges are bubbling.
- Take the dish from the oven and let it stand for 5 - 7 minutes to set. Enjoy with fried or baked pita wedges and tortilla chips.
