4-Cheese Spinach-Artichoke Dip
This indulgent appetiser skips mayonnaise in favour of a rich blend of four cheeses and sour cream. Frozen spinach and artichoke hearts are combined with roasted red pepper and garlic for a flavourful, creamy dip. It bakes until golden and bubbly, ideal for serving with your choice of crackers. Ingredients
- 10 ounces frozen chopped spinach, thawed, drained, and squeezed dry
- 14 ounces artichoke hearts, chopped or 2 (7 ounce) jars marinated artichoke hearts
- 3 garlic cloves, minced
- 1 cup sour cream
- 4 ounces cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 1 roasted red pepper, chopped
Method
- Set your oven to heat to 350 degrees.
- Prepare the vegetables by chopping them.
- Combine all the cheeses with the sour cream in a bowl.
- Stir the chopped vegetables into the cheese and sour cream mixture.
- Transfer the combined mixture into a 7" x 11" baking dish, spreading it evenly.
- Bake the dish covered for 20 minutes at 350 degrees. Take off the cover and bake for another 5 minutes or until the top is lightly browned.
