4 Cheese Mexican Tortilla Appetizers
These quick appetisers start with crisp flour tortillas. They are spread with refried beans and a layer of taco sauce, then topped with chopped red and green bell peppers, sliced green onions, and optional red pepper flakes. A generous sprinkle of four-cheese Mexican blend finishes them before a final bake to melt the cheese. They are then cut into wedges for serving. The whole process takes only 18 minutes.
Ingredients
- 6 6 inch fajita-size flour tortillas
- 1 (16 ounce) can ortega refried beans
- 1/2 cup ortega thick & smooth taco sauce, medium
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup sliced green onion (about 3)
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 cups four-cheese Mexican blend cheese (8 ounces)
Method
- Heat your oven to 400º F.
- Arrange the tortillas on one or more baking sheets.
- Bake the tortillas for 3 to 4 minutes until they become crisp.
- Distribute the refried beans evenly across the surface of each crisp tortilla.
- Spoon about 1 tablespoon of taco sauce over the beans on each tortilla.
- Scatter the chopped bell peppers, green onions and optional crushed red pepper over the top.
- Cover the toppings with the shredded four-cheese Mexican blend.
- Return the baking sheet to the oven and bake for 7 to 8 minutes, just until the cheese has fully melted.
- Slice each tortilla into wedges for serving.
- A pizza cutter is an ideal tool for cutting the wedges.
