4 Cheese Lasagna
This vegetarian Italian lasagne is a cherished family recipe featuring four cheeses. It layers uncooked lasagne sheets with a blend of ricotta and cottage cheese, mozzarella, parmesan and pasta sauce. The dish bakes directly, requiring no pre-cooking of the noodles. It yields one pan, serving eight to ten people and takes about 75 minutes to prepare and cook. You can add vegetables like mushrooms or zucchini for extra nutrition.
Ingredients
- 1 (16 ounce) box lasagna noodles
- 1 (26 ounce) jar pasta sauce
- 16 ounces cottage cheese
- 16 ounces ricotta cheese
- 2 lbs mozzarella cheese, shredded
- 1/2 cup parmesan cheese
Method
- Set your oven to heat to 350 degrees.
- Mix the cottage cheese, ricotta and 1/4 cup of the parmesan cheese together in a bowl. Place this to one side.
- Spread a thin layer of the pasta sauce over the base of a 14x9x2 inch baking dish.
- Arrange a single layer of the uncooked lasagne noodles over the sauce.
- Dot spoonfuls of the prepared cheese mixture over the noodles and smooth it into an even layer.
- Scatter a generous amount of the shredded mozzarella cheese over the cheese layer.
- Pour over another layer of the pasta sauce.
- Continue repeating the layering process of noodles, cheese mixture, mozzarella and sauce until you near the top of your pan.
- Finish with a final coating of sauce, then top with all the remaining mozzarella and the rest of the parmesan cheese.
- Cover the dish tightly with foil and bake for 30 minutes.
- Remove the foil and return the lasagne to the oven for a further 30 minutes.
- Allow the baked lasagne to rest for 5 minutes before you cut and serve it.
