4 Cheese Chicken and Bacon Tortellini
This indulgent one dish meal combines fresh four cheese tortellini with seasoned chicken, crispy bacon, mushrooms and green onions, all coated in a rich four cheese pasta sauce. It is a very filling comfort food that serves four to six people. The chicken and bacon can be prepared in advance for a quicker assembly, making it a convenient yet impressive dish for family dinners.
Ingredients
- 2 (330 ml) envelopes four cheese pasta sauce
- 1 kg fresh four- cheese tortellini
- 3 boneless skinless chicken breasts
- 1/2 lb bacon
- 1/2 cup green onion
- 1 cup diced mushroom
- salt and pepper
Method
- Cook the bacon in a pan until it becomes crisp and can be crumbled.
- Remove the bacon fat and cook the chicken breasts in the same pan, seasoning them as preferred.
- Allow the bacon and chicken to cool, then crumble the bacon and cut the chicken into small pieces.
- This mixture can be refrigerated for later use or used immediately.
- Bring a large pot of water to a boil and cook the tortellini, chopping the green onion and mushrooms while it cooks.
- Drain the cooked tortellini and return it to the pot. Add the two packages of four cheese sauce, the cooked chicken, crumbled bacon, green onion and mushrooms. Simmer for approximately 20 min, stirring frequently to prevent sticking.
- Serve the dish hot, which yields 4-6 good size portions.
