4-Bean Relish
This vibrant American side dish combines four types of tinned beans with a sweet and tangy dressing. The relish is prepared by whisking together a vinaigrette, then tossing it with sliced spring onions, diced red onion, Peppadew peppers, and honey. After mixing, it needs to rest in the refrigerator for the flavours to develop fully. It is an ideal make-ahead dish for summer gatherings, requiring just 20 minutes of active preparation time to serve six people.
Ingredients
- 1/3 cup red wine vinegar
- 1/4 cup balsamic vinegar
- 1/3 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 1/4 cup sliced spring onions (about 3 spring onions)
- 3/4 cup finely diced red onion
- 1/4 cup diced jarred Peppadew peppers or roasted red bell peppers
- 3 tablespoons honey
- 1 (350g) tin white beans, drained
- 1 (350g) tin chick peas, garbanzo beans, drained
- 1 (350g) tin pinto beans, drained
- 1 (350g) tin black beans, drained
Method
- In a large bowl, whisk together the red wine vinegar, balsamic vinegar, olive oil, 1/2 teaspoon sea salt, and pepper to taste.
- Add the sliced spring onions, diced red onion, Peppadew peppers, honey, drained white beans, chickpeas, pinto beans, and black beans to the bowl and toss everything to coat in the dressing.
- Place the bowl in the refrigerator and let the mixture sit for at least 2 hours so the flavours can blend.
- Give the bean relish a thorough mix just before you are ready to serve it.
