This Mexican-inspired one-dish meal is a family favourite. It features a hearty filling of four different beans combined with soup, onions, and green chiles, all rolled into flour tortillas. The enchiladas are baked in a dish with sauce, then topped with cheese until melted and bubbly. It yields eight enchiladas, serving four people, and takes about 55 minutes to prepare and cook. You can add your preferred toppings like sour cream or avocado to finish.

4 Bean Enchiladas

Ingredients

  • 8 large flour tortillas
  • 1 (15 ounce) can red kidney beans, drained
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can great northern beans, drained
  • 1 (10 3/4 ounce) can cream of chicken soup
  • diced green chilis
  • 1/3 cup chopped onion (optional)
  • 1 (12 ounce) can enchilada sauce (I like the green lately)
  • 1 1/2 cups shredded monterey jack cheese or 1 1/2 cups cheddar cheese

Method

  1. In a large bowl, mix together the drained kidney beans, garbanzo beans, black beans, great northern beans, cream of chicken soup, optional chopped onion, and diced green chilis.
  2. Place roughly 1/4 cup of this bean mixture onto one end of each large flour tortilla.
  3. Roll up each tortilla tightly from the filled end.
  4. Place the rolled tortillas in a 9x13-inch baking dish with the seam side facing down.
  5. Pour the can of enchilada sauce over all the tortillas to cover them.
  6. Cover the dish tightly with aluminium foil.
  7. Bake in an oven preheated to 350°F for 25 minutes.
  8. Remove the dish from the oven and take off the foil.
  9. Sprinkle the shredded Monterey Jack or cheddar cheese evenly over the enchiladas.
  10. Return the dish to the oven, without the foil, and bake for about 10 minutes until the cheese has melted.
