This is a fantastic potluck dish with a wonderfully tangy, barbecue flavour. The recipe combines four types of beans with browned ground beef, crispy bacon, and a sweet and savoury sauce. It can be prepared in a slow cooker or baked in the oven, resulting in a rich, hearty casserole that serves a crowd. I adapted it from my mother's original version.

4 Bean Casserole With Hamburger

Ingredients

  • 1 (28 ounce) can country style bush's baked beans
  • 1 (15 ounce) can lima beans, drained
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can butter beans, drained
  • 8 slices bacon, cooked and crumbled
  • 1 onion, chopped
  • 1 cup brown sugar
  • 1/3 cup lemon juice or 1/3 cup vinegar
  • 1 teaspoon dry mustard
  • 1/2 cup ketchup
  • 1 lb ground beef, browned and drained
  • 2 tablespoons molasses

Method

  1. Cook the bacon until crisp, then crumble it and set it aside.
  2. Brown the ground beef together with the chopped onion, then drain off any excess fat.
  3. Drain and rinse the lima beans, kidney beans, and butter beans, but do not drain the baked beans.
  4. Combine all the ingredients in a slow cooker and cook on low for at least 2 hours, or transfer everything to an oven-safe dish and bake uncovered at 350 degrees for 1 hour.
