4 Bean Casserole With Hamburger
This is a fantastic potluck dish with a wonderfully tangy, barbecue flavour. The recipe combines four types of beans with browned ground beef, crispy bacon, and a sweet and savoury sauce. It can be prepared in a slow cooker or baked in the oven, resulting in a rich, hearty casserole that serves a crowd. I adapted it from my mother's original version.
Ingredients
- 1 (28 ounce) can country style bush's baked beans
- 1 (15 ounce) can lima beans, drained
- 1 (15 ounce) can kidney beans, drained
- 1 (15 ounce) can butter beans, drained
- 8 slices bacon, cooked and crumbled
- 1 onion, chopped
- 1 cup brown sugar
- 1/3 cup lemon juice or 1/3 cup vinegar
- 1 teaspoon dry mustard
- 1/2 cup ketchup
- 1 lb ground beef, browned and drained
- 2 tablespoons molasses
Method
- Cook the bacon until crisp, then crumble it and set it aside.
- Brown the ground beef together with the chopped onion, then drain off any excess fat.
- Drain and rinse the lima beans, kidney beans, and butter beans, but do not drain the baked beans.
- Combine all the ingredients in a slow cooker and cook on low for at least 2 hours, or transfer everything to an oven-safe dish and bake uncovered at 350 degrees for 1 hour.
