3D Brownie Christmas Tree

Ingredients

  • 150g dark chocolate (70% cocoa solids)
  • 225g unsalted butter
  • 420g caster sugar
  • 5 large free-range eggs
  • 120g plain flour
  • 60g cocoa powder
  • 250g instant royal icing, made according to packet instructions and coloured green
  • Assorted sprinkles, to decorate
  • Icing sugar, for dusting
  • Special Equipment:
  • 22x30cm/9x12in baking tin
  • Star shaped cookie cutters in assorted sizes

Method

  1. Begin by preheating your oven to 190°C/375°F. Prepare a 22x30cm/9x12in baking tin by greasing it and lining it with parchment paper.
  2. Gently melt the dark chocolate, unsalted butter and caster sugar together. Take the pan off the heat and let it cool briefly. Stir in the plain flour, cocoa powder and eggs, then beat the mixture until it becomes smooth and glossy.
  3. Transfer the brownie batter into your prepared tin. Bake it for 35-40 minutes. The surface should be set and shiny, while the centre retains a slight wobble.
  4. Leave the baked brownie to cool fully inside the tin. Once cool, turn it out and peel away the baking parchment carefully.
  5. Use your assortment of star-shaped cookie cutters to stamp shapes from the brownie. Cover each star with the prepared green royal icing. Assemble the tree by stacking the stars, placing the largest at the bottom and the smallest at the peak. Finish by adding sprinkles and a light dusting of icing sugar.
