Ingredients

  • Pam cooking spray
  • 2 1/2 ounces hot Italian turkey sausage
  • 3/4 lb boneless skinless chicken breast, cut into 1-inch pieces
  • 1 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped celery
  • 1/2 cup uncooked white rice
  • 1/2 cup well-drained and slivered canned water chestnut
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon black pepper
  • 2/3 cup condensed cream of chicken soup, undiluted
  • 1/3 cup buttermilk
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon garlic powder
  • paprika

Method

  1. Heat your oven to 350.
  2. Coat a 10-inch ovenproof skillet with cooking spray. Cook the sausage for about 2 minutes, then transfer it to a paper towel.
  3. Wipe the pan, spray it again, and cook the chicken pieces until done. Remove the chicken with the sausage using a slotted spoon.
  4. Place the onion, red pepper and celery in the pan and cook them for about 3 minutes until they begin to brown.
  5. Mix in all the other ingredients, including the cooked meats. Scatter the parsley and paprika over the top.
  6. Bake the dish without a cover for 50-60 minutes, or until the rice is tender.
