30-Minute Turkey Chilli
This quick and satisfying turkey chilli is an American main course ready in 30 minutes. It combines lean turkey mince with kidney beans, tomatoes, and aromatic spices for a hearty dish. Serve it with your favourite toppings like avocado, cheese, or sour cream. It's ideal for making ahead and freezing in portions for convenient future dinners.
Ingredients
- 3 tbsp extra-virgin olive oil
- 1 medium yellow onion, chopped
- 5 cloves garlic, chopped
- 1 tbsp salt
- 2 tsp chilli powder
- 1 tsp dried oregano
- 15g tomato puree
- 1 chipotle chile in adobo, coarsely chopped, with 1 tbsp sauce
- 450g turkey mince
- 350ml Mexican lager-style beer
- 1 (415g) tin whole peeled tomatoes, with their juice
- 1 (475g) tin kidney beans, rinsed and drained
- Sliced spring onions, coriander sprigs, avocado, sour cream, grated Monterey jack cheese, and/or tortilla chips, for garnish, optional
Method
- Warm the olive oil in a large, heavy skillet. Cook the chopped onion and garlic with the salt, chilli powder, and oregano, stirring until aromatic for about 3 mins.
- Mix in the tomato puree, chopped chipotle chilli, and its sauce. Cook for 1 min more. Crumble in the turkey mince with a wooden spoon and cook until no longer pink, roughly 3 mins.
- Pour in the Mexican lager and let it simmer until the liquid has reduced by approximately half, which should take about 8 mins.
- Add the tinned tomatoes, crushing them with your fingers into the pan along with their juice. Stir in the rinsed kidney beans. Bring to a boil and cook uncovered, stirring now and then, until thickened, about 10 mins.
- Spoon the finished chilli into bowls. Offer optional garnishes like sliced spring onions, coriander, avocado, sour cream, grated cheese, or tortilla chips for serving.
