Sesame Roasted Sweet Potatoes
These roasted sweet potato wedges are a quick and healthy appetiser, ready in half an hour. They are tossed in spices and roasted until golden, then finished with a drizzle of sesame oil and tahini. A final sprinkle of sesame seeds and fresh cilantro leaves adds texture and flavour. This simple dish is perfect for sharing as a starter or as a colourful side.
Ingredients
- 2 sweet potatoes, peeled and cut into wedges
- 1 tablespoon vegetable oil
- 1/2 teaspoon chili powder
- a pinch of cayenne pepper for spiciness
- salt and pepper
- 2 tablespoons roasted sesame oil
- 2 tablespoons tahini
- 2 tablespoons sesame seeds
- fresh cilantro
Method
- Set your oven to 375 degrees. Combine the sweet potato wedges with vegetable oil, chili powder, cayenne, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, giving them a gentle stir every 5-10 minutes.
- Turn the oven temperature up to 400 degrees and roast the potatoes for a further 5-10 minutes until they start to colour. Stir the pieces occasionally to ensure even cooking. Take them out and allow to cool for a few minutes.
- Transfer the sweet potatoes to a serving platter or leave them on the baking sheet. Drizzle the sesame oil and tahini over the top. Scatter with sesame seeds and finish with a handful of fresh cilantro leaves. Serve straight away.
