Sesame Mango Chicken Teriyaki
This speedy Asian dinner features chicken pieces coated in a spiced flour, then cooked with onions in a rich teriyaki sauce made from blended dates, soy sauce, and ginger. Frozen mango chunks are stirred in towards the end for a sweet contrast. The dish simmers for 10-15 minutes before being served over rice with optional toppings like sesame seeds and green onions. It's designed to be a wholesome meal without refined sugars.
Ingredients
- 15 medjool dates, pitted and soaked in 1/2 cup hot water (see notes – you can use sugar instead if you want)
- 3/4 cup soy sauce, reduced sodium
- 1/4 cup rice vinegar
- 3 cloves garlic
- 1 tablespoon fresh ginger, minced, smashed, or in paste form
- 1/2 cup chicken broth
- 1 yellow onion
- 1-2 lbs. boneless skinless chicken breasts (see notes)
- 1/4 cup flour
- a generous pinch of salt and pepper
- a generous pinch of chili powder
- 1 tablespoon oil
- 2-3 cups frozen mango chunks (fresh could also work)
- sesame seeds, green onions, sesame oil, fish sauce, or limes for topping
- cooked rice for serving
Method
- If you plan to serve this with rice, begin cooking it now so it will be ready later.
- Place the soaked dates with their water, soy sauce, rice vinegar, garlic, and ginger into a blender or food processor. Blend the mixture until it becomes completely smooth, then set it aside.
- Slice the onion thinly. Chop the chicken breasts into bite-sized pieces. Mix the flour, salt, pepper, and chili powder in a shallow bowl, then lightly coat each chicken piece in this flour mixture.
- Warm the oil in a large pan. Cook the onions for a few minutes, then add the chicken and cook until it browns. Pour in the prepared sauce and the chicken broth, reducing the heat to prevent splashing. Add more broth if the sauce seems too thick. Cover the pan and let it simmer for 10 minutes. Stir in the frozen mango chunks, cover again, and simmer for another 5-10 minutes.
- Spoon the chicken and mango mixture over cooked rice. Finish with your choice of toppings such as sesame seeds, sliced green onions, a drizzle of sesame oil, fish sauce, or a squeeze of lime juice.
