Philadelphia-Style Ice Cream
This Philadelphia-style ice cream recipe skips the eggs, allowing for a quick preparation in about 30 minutes. The result is an exceptionally fresh and airy frozen treat. Simply combine chilled dairy with sugar and flavourings, then churn. You can enjoy it immediately as soft serve or freeze it until solid. It yields approximately one quart, serving eight people.
Ingredients
- 2 cups heavy cream, chilled
- 1 cup whole milk, chilled
- 3/4 cup sugar
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 tablespoon not-peaty Scotch, such as Glenlivet 12 or Monkey Shoulder (see note)
- 2 tablespoons non-fat powdered milk (optional, see note)
Method
- Combine all the listed ingredients in a large mixing bowl.
- Whisk the mixture thoroughly until the sugar has fully dissolved.
- Pour the combined liquid into your ice cream maker and churn it following the machine's guidelines.
- For soft serve, you can enjoy the ice cream straight from the churn.
- Alternatively, transfer it to a sealed container and place it in the freezer to harden for 4 to 5 hours.
- Using multiple smaller containers will significantly shorten the hardening period.
