This is a remarkably tasty chili that is perfect for a speedy weeknight dinner. It uses lean ground beef combined with black beans, diced tomatoes and green chillies, all simmered in a reduced-sodium beef broth. The dish comes together quickly, developing its rich flavours in just 20 minutes of simmering time. It is a versatile recipe where you can easily adjust the bean and tomato quantities. Serve it with optional toppings like shredded cheddar, fresh coriander or green onions for a complete meal.

30-Minute Chili

Ingredients

  • 1 lb ground beef, 95% lean
  • 1 (15 1/2 ounce) can black beans, rinsed and drained
  • 1 (14 ounce) can reduced-sodium beef broth
  • 1 (14 1/2 ounce) can diced tomatoes and green chilies
  • 2 tablespoons chili powder
  • shredded cheddar cheese (optional)
  • chopped fresh cilantro (optional)
  • minced green onion (optional)

Method

  1. Place a large nonstick skillet on the heat. Cook the ground beef for 8 to 10 minutes, breaking it into roughly 3/4 inch pieces as it cooks and stirring now and then. Drain any excess fat from the pan.
  2. Add the black beans, beef broth, diced tomatoes with green chillies and the chili powder to the skillet. Stir everything together and bring the mixture up to a boil. For a thicker consistency, you may choose to use less broth or allow it to cook down further.
  3. Lower the heat, place a lid on the skillet and let it simmer for 20 minutes. Stir the chili occasionally while it cooks to let the flavours meld.
  4. Dish up the chili and add your choice of optional garnishes, such as shredded cheese, chopped coriander or minced green onions.
