This British pasta supper combines chicken and fresh tarragon in a creamy garlic sauce with wilted spinach. It is a sophisticated yet quick meal, perfect for a weeknight dinner or lunch. Chicken and Tarragon Pasta

Ingredients

  • 250g dried pasta such as tagliatelle
  • 2 tbsp olive oil
  • 2 skinless boneless chicken breast fillets cut into small pieces
  • 2 garlic cloves chopped
  • 142ml carton single cream
  • 3-4 tbsp roughly chopped fresh tarragon leaves
  • 100g spinach leaves, thick stems removed
  • lemon wedges, to serve

Method

  1. Boil the pasta in water for 8-10 minutes, or as directed on the packet, until it is just tender.
  2. While the pasta cooks, warm the oil and fry the chicken pieces for 4-5 minutes until golden and cooked through. Stir in the garlic, cream, tarragon and 3 tbsp of the pasta water, then heat gently.
  3. Once the pasta is ready, add the spinach to the pot so it wilts in the hot water. Drain the pasta and spinach thoroughly, then combine with the creamy chicken mixture. Season with salt and pepper and accompany with lemon wedges for squeezing.
