30 Minute Chicken Tamales
These speedy tamales are a great way to enjoy a classic dish without the long preparation. Using ready-cooked rotisserie chicken and a simple dough made from masa harina, they are filled with a tangy green tomatillo sauce. Wrapped in softened corn husks and steamed, they make a perfect meal or snack. The recipe yields about 25 tamales, ideal for sharing with friends and family.
Ingredients
- 6 cups maseca corn masa harina flour, mix for tamales
- 6 cups chicken broth
- 1 cup corn oil or 1 cup other vegetable oil (corn will enhance the flavor)
- 2 teaspoons salt
- 1 teaspoon baking powder
- 2 large rotisserie chicken
- 2 (15 ounce) jars green tomatillo sauce
- 1 bag corn husk
Method
- Soften the corn husks by soaking them in warm water.
- Combine the masa harina flour, corn oil, salt, baking powder and chicken broth in an electric mixer until you have a smooth, consistent dough.
- Take the meat from the rotisserie chickens, shred it, and mix it with the green tomatillo sauce to marinate.
- Take a softened corn husk and spread an even layer of the masa dough over it, then top with a spoonful of the marinated chicken.
- Fold the left and right sides of the husk inward towards the centre so they overlap, creating a long, enclosed package.
- Fold the bottom, empty section of the husk upwards, tucking it against the side of the tamale where the seam is.
- Arrange the prepared tamales in a steamer and steam them for 35-40 minutes.
- Remember to check the steamer every 20 minutes.
- A tamale is fully cooked when the masa pulls away cleanly from the corn husk wrapper.
