30 Minute Chicken and Dumpling Soup
This Chinese-inspired one dish meal delivers a comforting bowl of soup in minimal time. It combines shredded chicken, aromatic herbs, garlic, and mixed vegetables in a rich broth. Soft dumplings, made from a simple baking mix, are dropped directly into the pot to cook through. The entire process, from start to finish, takes only 30 minutes, making it an ideal choice for a speedy yet satisfying family dinner.
Ingredients
- 2 cups cooked chicken (diced or shredded)
- 4 cups chicken broth
- 1 tablespoon fresh parsley
- 1 tablespoon fresh thyme leave
- 2 garlic cloves, minced
- 1 lb frozen mixed vegetables, thawed and drained
- 1 cup Bisquick baking mix
- 1/3 cup milk
Method
- Place the cooked chicken, chicken broth, parsley, thyme, minced garlic, and thawed mixed vegetables into a 3 quart saucepan and bring the mixture to a boil.
- Combine the Bisquick baking mix with the milk to create a soft dough. Use a teaspoon to drop portions of the dough into the boiling soup. Should any dumplings sink, gently lift them back to the surface with a slotted spoon to prevent them from being crushed.
- Lower the heat and allow the soup to cook without a lid for 10 minutes. Then, place the lid on the saucepan and continue to cook for a further 10 minutes.
