30-Minute Beef Satay With Peanut-Ginger Ramen
This speedy dish combines marinated flank steak with a rich peanut-ginger sauce for ramen noodles. The beef is quickly grilled while you prepare the creamy sauce in a blender. It's a flavourful meal that comes together in just over half an hour, perfect for a weeknight dinner. The recipe allows for optional additions like garlic and red pepper flakes to suit your taste.
Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons fresh ginger, grated, peeled
- 1 garlic clove, grated (optional)
- 1/4 teaspoon red pepper flakes (optional)
- 2 lbs flank steaks, thinly sliced against the grain (I have subbed chicken successfully)
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 teaspoon fresh ginger, grated and peeled
- 1/3 cup creamy peanut butter
- 1/3 cup water (or more if you prefer thinner sauce)
- 1 tablespoon soy sauce (you may not use it all)
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup roasted peanuts, chopped
- 3 green onions, sliced
- vegetable oil, for grill
- 2 (3 ounce) packages ramen noodles, cooked according to package instructions (seasoning packet discarded)
Method
- If you plan to use wooden skewers, soak 12 of them in water for 15 minutes. Alternatively, you can grill the beef strips without skewers.
- Combine 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 1/2 teaspoons of sugar, and 1 1/2 teaspoons of grated ginger in a shallow dish. You may add a grated garlic clove and 1/4 teaspoon of red pepper flakes if you like. Place the beef in the marinade, toss to coat, and allow it to sit for 10 minutes.
- While the beef marinates, blend 1 tablespoon of lime juice, 1 teaspoon of sugar, 1 teaspoon of ginger, the peanut butter, and 1/3 cup of water until smooth. Taste the sauce and add up to 1 tablespoon of soy sauce as needed, blending again. Stir in the chopped peanuts, sliced green onions, and an optional 1/4 teaspoon of red pepper flakes.
- Preheat your grill or grill pan. Thread the marinated beef onto the soaked skewers if using. Clean the grill grates and lightly oil them. Cook the beef for 3 to 4 minutes on each side until nicely charred and cooked through. Toss the cooked ramen noodles with the prepared peanut-ginger sauce. Serve the noodles alongside the grilled beef.
