30 Minute Beef Pot Pie for 2
This speedy beef pot pie was inspired by a 30-minute TV meal. It transforms simple stew meat and vegetables into a rich, comforting filling, all topped with golden biscuits. Perfect for a cosy dinner for two, it delivers classic flavours without the long wait.
Ingredients
- 1/2 lb stew meat, cut into bite size pieces
- 2 cups chicken broth or 2 cups beef broth
- 1 tablespoon olive oil
- 1 tablespoon margarine
- 1 large carrot, cubed into small cubes
- 1 small onion, chopped fine
- 1 large potato, cubed into small cubes
- 2 teaspoons flour
- 1 (5 count) can biscuits (I prefer the flaky type of biscuits)
- salt and pepper
Method
- Bake the biscuits following the directions on the can.
- Bring the broth to a boil in a saucepan.
- Add the cubed stew meat to the broth, season with salt and pepper, and reduce to a simmer.
- Heat the olive oil in a medium pan.
- Add the margarine to the pan and allow it to melt with the oil.
- Cook the carrots in the pan, then add the onions and potato.
- Continue cooking the vegetables until they become tender.
- Once the vegetables are tender, mix in the flour until it is fully incorporated.
- Gradually pour the simmering beef and broth mixture into the vegetables and heat until the sauce thickens.
- Spoon the filling into a serving dish and arrange the baked biscuits on top.
