3 Step Bacon and Vegetable Soup

Ingredients

  • 1 carrot
  • 1 onion
  • 1 turnip
  • 1 swede
  • 1 small parsnip
  • 400 g bacon, bones
  • 2 celery ribs
  • 2 1/2 liters cold water
  • 350 g split peas

Method

  1. Place all the chopped vegetables, bacon bones, split peas, and cold water into a large saucepan and bring the contents to a boil.
  2. Continue cooking at a brisk simmer until the split peas have broken down completely and the meat separates easily from the bacon bones, which should take roughly 2 1/2 hours.
  3. Take out the bones, strip the meat from them, chop it, and return it to the pan. For a texture similar to traditional pea and ham soup, you may choose to puree the vegetable mixture before adding the meat back in.
