3 Season Crock Pot Roast
This hearty one-pot meal features a beef roast infused with the flavours of three seasoning mixes. It is cooked slowly in a crock pot alongside a medley of fresh and frozen vegetables, including potatoes, carrots, green beans, and mushrooms. The long, gentle cooking process allows the meat to become tender while the vegetables soak up the savoury broth. It is a simple and wholesome dish that requires minimal preparation for a comforting result.
Ingredients
- 1 (3 -5 lb) beef roast
- 1 (7/8 ounce) packet brown gravy mix
- 1 (1/2 ounce) packet Italian salad dressing mix
- 1 (2/3 ounce) packet ranch dressing mix
- 1 (16 ounce) package frozen green beans
- 1 (16 ounce) package fresh baby carrots
- 1 (14 ounce) can beef broth
- 2 -4 medium potatoes, quartered
- 1 onion, quartered
- 1 (8 ounce) carton fresh sliced mushrooms
- 2 fresh garlic cloves, chopped
Method
- Combine the three packets of dry seasoning in a bowl.
- Coat the beef roast with the seasoning mixture, setting aside any that remains.
- Arrange the quartered potatoes, carrots, frozen green beans, quartered onion, and sliced mushrooms in the crock pot.
- Position the seasoned roast on top of the vegetable layer.
- Scatter the reserved seasoning mix and the chopped garlic over the roast.
- Pour the can of beef broth over everything in the pot.
- Cook on the low setting for approximately 6 hours.
- For vegetables with a firmer texture, after 5 hours on low, take out the roast. Move the vegetables to the bottom of the crock pot, return the roast on top, and cook for a further 2 hours on high.
- Note that you may thicken the cooking liquid into a gravy on the hob once the dish is finished.
